This is actually food related as I'm making pate for the cafe again. It being Father's Day on Sunday and the first of spring today, the weather has warmed up enough for pate to be back on the menu.

So I've scaled the recipe up to 3kg of livers and remembered that you have to examine every packet carefully before tipping into the strainer. One carelessly left-in gall bladder can ruin an entire batch of pate with an appalling bitterness it is not possible to overcome. At all.
